Cool Coco Mojito
Back in December, we took a family trip to Mexico. On the beach, we sipped on colorful cocktails, galore! Usually, I’d be drinking juicy craft beers, but there’s something about a sunny, sandy beach that calls for a cocktail.
My favorite drink of the trip was the Coconut Mojito. The ideal beachy drink, the Coconut Mojito is a twist on the classic rum, mint & lime cocktail. Since Spring is finally in the air, and the mint we recently planted has been begging to be put to good use, I decided to recreate my favorite vacay cocktail.
This cool Coco Mojito combines both light rum & coconut rum (like Bacardi & Malibu Rum) with fresh mint leaves, a squeeze of fresh lime juice and cream of coconut for an extra punch of coconut flavor. In a highball glass, add about 6 fresh mint leaves, a tablespoon of Cream of Coconut, and the juice from a quarter of lime. Gently muddle together and top with ice. I like to use crushed ice in my cocktails, especially this one! Loading it up with lots of crushed ice gives the drink a slushy consistency, so you almost feel like you're drinking a boozy snow ball. Add in both types of rum and top it off with a hefty splash of soda water. Using a long cocktail spoon, give the drink a good stir. Finish it off with a slice of lime and some more mint leaves to garnish and you're ready to start sipping!
