Cacio e Pepe
You may have already binged on all your quarantine snacks, but if you’ve stocked up on pantry staples, odds are you’ve got a box or two of dried pasta on hand.
If you also happen to have olive oil (or butter), black pepper & Parmesan cheese, you’ve got the makings for Cacio e Pepe, a fancy name for a really simple pasta dish.
This ‘cheese & pepper’ pasta is so simple and flavorful. It uses minimal ingredients and comes together in no time, making it perfect for a quick quarantine lunch or dinner. (Never thought we’d be uttering that phrase, but here we are.) A big bowl of pasta and a glass of wine can do wonders to soothe an uneasy mind.
We’re all in uncharted territory here, so look for comfort where you can, enjoy a simple meal and do what you can to protect yourself and the people you love. We’ll get through this together…from a safe distance!
Cacio e Pepe
Ingredients:
- 12 oz. pasta
- 2-3 tbsp. olive oil (or butter)
- 1 tsp. cracked black pepper
- 1/2 cup (or more) grated romano (or parmesan) cheese
- Salt to taste
- *Reserved pasta water
Instructions:
- Boil pasta to al dente in salted water and drain, reserving about 1 cup pasta water.
- Add 1/4 of the reserved pasta water back to the pot.
- Add oil (or butter), cracked black pepper, cheese and a couple pinches of kosher salt and stir until pasta is coated.
- Add more pasta water as needed. Sauce should be light and slightly creamy.
