Chocolate Peanut Butter Bites with Sea Salt & Almonds
When it comes to sweet treats, peanut butter & chocolate are at the top of my 'they belong together for eternity' list. The combination of creamy peanut butter mingling with smooth, melty chocolate is one of my favorite combos. In comes this latest recipe! If you're a fan of the chocolate/peanut butter combo, you're gonna want to try these Chocolate Peanut Butter Bites with Sea Salt & Almonds!
These easy bites taste like homemade Reese's Peanut Butter Cups, with no empty candy wrapper evidence lying around! To make your own batch, you'll need graham crackers crumbs, creamy peanut butter, powdered sugar & butter for the base and semi-sweet chocolate chips. This batch has a little extra crunch with some sliced almonds mixed in, but you can get creative and add your favorites, like chopped peanuts or pretzels! The bars get finished off with some flakes of sea salt for a little nice, salty bite to balance out the sweetness!.
In a food processor, combine 1 cup (6 sheets) of graham cracker crumbs, 3/4 cup creamy peanut butter, 1 cup powdered sugar, 1 stick of melted butter & 1/2 cup sliced almonds. Mix on a lower speed until for about a minute or so, stopping to scrape the edges and mixer attachment, if you need to. Evenly spread the peanut buttery goodness out onto a parchment lined, 9x9 pan and pop it in the refrigerator while you move on to the topping.
For the topping, microwave 3/4 cup chocolate chips in a microwave safe dish for about a minute. Stir the melty chips together until you have a smooth, melted chocolate. Add in about 2 tablespoons of peanut butter and stir until you have a glistening. smooth chocolate sauce. Pour the chocolate over the peanut butter mixture and smooth it out over the entire top. Finish it off with some cracked sea salt and refrigerate for at least an hour before cutting.
Once they've fully set & the chocolate is hardened, I like to cut them into smaller, bite sized pieces. We got 36 beautiful bite sized pieces out of this batch. The smaller the piece, the more justified I feel in grabbing three at a time!
You’re gonna want to keep these guys refrigerated. At room temperature, the peanut butter & chocolate can get pretty soft. Still delicious PB & choc, but trust me when I say, they should be eaten cold! Keep them in an airtight container in the refrigerator and just graze by when you're craving a sweet snack!
