Strawberry Honey Lime Popsicles
Strawberry season is wrapping up, so, of course we’ve been loading up on delicious (clearance!) berries for this recipe. It’s not hard to find strawberries year round, but the berry best time of year, that window of time when the berries are deep red, super sweet & juicy, happens during its season. From April to June, especially in South Louisiana, stores are busting at the seams with juicy red berries.
Since we got our new stainless popsicle molds in the mail, we've been experimenting with different flavors and these Strawberry Honey Lime pops are the current fav! These pretty popsicles are loaded with juicy, ripe strawberries, fresh squeezed lime juice, some fresh mint and an easy honey syrup for a balanced sweetness.
First, you'll make a quick honey syrup by combining 1/4 cup honey with 1/4 cup water. Heat the two in a small saucepan on low heat until the honey melts into the water and you have a smooth mixture. The honey syrup balances out the tartness of the lime and adds the perfect subtle sweetness to your popsicles.
In a blender (this is the one we use!) or food processor, combine the honey syrup with washed & stemmed strawberries, the juice from 1 medium sized lime, and a handful of fresh mint leaves (about 20-30 leaves, depending on the size). If you can't find fresh berries, you can use about 25 whole frozen strawberries.
Carefully fill the popsicle molds with the strawberry mixture, leaving a little space at the top for any expansion. Cover with the stainless steel tops and press the popsicle sticks down into the center of the lid. Turn these bad boys into popsicles by letting them chill out in your freezer.
You'll want to let these freeze for around 3 hours for a nice solid popsicle (depending on your freezer). When you're ready to pop them out, dip the molds into a half full glass of water or run the mold under the faucet for a few seconds to help them slide right out!
