Street Corn Salad
We’re just getting into the swing of summer and it’s been getting hot in here. Mid-June in south Louisiana, the air starts getting that thick & sticky quality to it. Having a cool escape from the swamp heat is precious, so to keep the kitchen cool and the food hot, we grill!
We’ve done it before and we’ll do it again because grilled corn is a beautiful thing! At the peak of its season (right now!) you can find great deals on fresh, unshucked ears of corn. They grill up in minutes and can go straight on a hot grill. Brushed with a little oil and charred on the grill, this fire-roasted corn comes out sweet and smoky, with tasty specs of charred kernels. Paired with this drool-worthy cilantro cream sauce, thinly sliced red onion, and juicy tomatoes, this tasty summer veggie becomes a full-on side dish in no time!
Street Corn Salad
Ingredients
- 6 ears fresh corn
- 3 tbsp. avocado oil, or high smoke point oil like grapeseed
- thinly sliced red onion, a few slices
- sliced cherry tomatoes, a big handful
- salt and pepper, to taste
- Cilantro Cream Sauce
- smoked paprika, for finishing
- crushed or ground red pepper, to taste
- Lime wedges
- Cilantro, garnish
- Cotija or Queso Fresco, optional garnish
Instructions
- Shuck corn, removing the husk and silk.
- Brush corn with oil and grill for 10-15 minutes until charred, rotating often.
- Once cooled, cut corn off the cob into a large bowl.
- Toss in red onion, tomatoes, salt & pepper, & a squeeze of lime.
- Top with a drizzle of the Cilantro Cream Sauce (as much or as little as you like).
- Sprinkle with smoked paprika, red pepper, and a hefty squeeze of lime.
- Optional toppings: chopped cilantro & cotija or queso fresco
