Tasty Thai Noodles

It’s no secret that the wonderful world of Thai food tops my list of favorites. Whether it’s a hot-n-spicy bowl of soup, a flavorful Spicy Beef Salad, or my personal favorite, a slurp-worthy bowl of noodles, odds are, I’ll be going back for seconds. The ingredient list may be a little lengthy, but the intense umami flavor that comes out in these dishes is completely worth the effort.

It’s not uncommon to find elements of spicy, sweet, savory and sour all in one dish, and this recipe is no exception. These ‘Tasty Thai Noodles’ channel the flavors of Pad See Ew, a classic Thai noodle dish that happens to be one of my favs.

For the ingredient list, you should find most of what you need at your go-to grocery store, but you’ll have better luck finding these ingredients at a great price at your local Asian Market. Not only will they have a larger variety of sauces and noodles than your regular grocery store, but they usually have great deals on produce!

The biggest element to this dish is the sauce. There are a lot of variations to Pad See Ew and you can always make adjustments to suit your taste, but the basic ingredients we’re using here are oyster sauce, sweet soy sauce, low sodium soy, fish sauce, chili oil and vegetable oil.

For the noodles, look for wide rice noodles (bonus points if you can find rice flake noodles)! These little rectangular sheets of noodles are perfectly bite sized and work really well with this dish.

Broccoli is another classic ingredient in this dish. Look for the leafier Chinese broccoli at your Asian Market, but if you can’t find it, broccoli crowns will work just fine. We’re also adding beef and tofu, packing these noods with tasty proteins, but feel free to customize your add-ins!

Tasty Thai Noodles

These tasty noodles channel the flavors of Pad See Ew, a classic Thai noodle dish that's full of flavor!

ingredients:

For sauce:
  • 3 tbsp. low sodium soy sauce
  • 2 tbsp. sweet soy sauce 
  • 1 tbsp. oyster sauce 
  • 1 tsp. fish sauce 
  • 1 tsp. chili oil (+ more for extra spice) 
  • 4 tbsp. vegetable oil
For noodles:
  • 6-8 oz. rice noodle or flake
  • 6 oz. beef (i.e. sirloin, flank, etc.), thinly sliced 
  • 1/3 pack firm tofu (~7 oz.) diced (optional) 
  • 6 stalks Chinese broccoli (cut in half or thirds) 
  • 2 cloves garlic, chopped or sliced 
  • 1 egg

instructions:

How to cook Tasty Thai Noodles

  1. Combine sauce ingredients in a bowl or small measuring cup and set aside. 
  2. Cook rice noodles in boiling water until fully tender. While noodles are boiling, continue to next steps. 
  3. Heat wok or large skillet to high heat. Add about 1 tbsp. of sauce and sliced beef to pan. Once beef is nearly cooked through, remove from pan and set aside. 
  4. Add another couple tablespoons of sauce to pan. Add tofu and broccoli and sauté for a couple minutes, stirring frequently. 
  5. Move broccoli and tofu aside in pan and add garlic, stirring frequently. Stir garlic into broccoli and tofu mixture and move aside in pan. 
  6. Crack in egg, quickly scrambling. 
  7. Add drained noodles, cooked beef and remaining sauce. Stir all ingredients together and continue cooking for a couple minutes, until sauce is fully incorporated. Add any additional spice and serve hot.

NOTES:

Tip- you might want to turn on your exhaust fan while this is cooking to avoid smoking up the kitchen!
