Crispy Curry Chickpeas
Chickpeas (a.k.a. garbanzo beans) are a health-packed powerhouse. This little legume is loaded with protein, fiber, iron and so much more. The list of vitamins and minerals goes on and on, making chickpeas a great choice to incorporate into your regular diet. Chickpeas may be best known as the main ingredient in hummus, but there are so many other ways to enjoy them.
For this easy recipe, we’re roasting spiced chickpeas in the oven until they get nice and crunchy, making them a perfect snack on their own, but they also make a great crouton replacement on a salad, topping for your favorite dips and spreads, you name it!
Crispy Curry Chickpeas
Ingredients
- 1 15 oz. can chickpeas (a.k.a. garbanzo beans)
- 1 tbsp. Avocado oil
- 1/2 tsp. salt
- 1 1/2 tsp. curry powder
- 1/4 tsp. cayenne or crushed red pepper (optional)
Instructions
- Drain and rinse chickpeas. Lay out on a towel and thoroughly pat dry, removing any loose skins.
- Toss in a bowl with oil, salt, and seasonings.
- Spread on a baking sheet and bake at 400°F for about 30 minutes (or until crunchy). They'll crisp up a little more as they cool.
Notes
These crispy chickpeas will lose their crunch if stored airtight, so we recommend finishing them off with no leftovers!
