Very Veggie Sandwich
Over the last few months, we’ve taken a break from the carnivorous lifestyle. We pressed pause on eating pork, beef, and chicken and have mostly been sticking to veggies, grains, and seafood. The transition’s been easy enough and we’ve got a growing list of veggie favorites around town (Zorbas & Taco Sisters top the list). Since we ditched meat though, there’s one thing I’ve been missing…
I love a good sandwich!
My favorite sandies come in a tight little package with toasty bread, the right chewy bite, and a good tangy balance (pickles & onions, please!). It’s hard to beat and is one of the things I’ve been missing lately. Since most of our favorite sandwiches around town have not been of the veggie variety (miss you, Blanchards), we decided to try out some meatless sandwiches of our own, starting with this fresh veggie version, slathered with a quick herb-infused vegan mayo. VERY VEGGIE SANDWICH
Ingredients
- 1/2 cup Vegan Mayo (JUST brand is good!)
- 2 tbsp chopped basil
- 2 tbsp chopped dill
- 1 large clove garlic, minced
- Squeeze lemon
- Fresh cracked black pepper
- Sprinkle cayenne
Instructions
- Start with toasted bread (we love DAVE'S KILLER BREAD).
- Spread a thin layer of herb mayo.
- Top with arugula, sliced cheese (try provolone, swiss, or pepper jack), sliced avocado, cucumber, tomatoes, a sprinkle of salt & cracked black pepper, thinly sliced red onion & sprouts.
Notes:
- A spritz of red wine vinegar is great but optional!
- Take it from veggie to vegan by removing the cheese.
- Refrigerate extra herb mayo in an airtight container
